KATARA begins with Francy and her son José Luis in the high mountains of Sotará, Cauca, Colombia. Working side by side through the harvest, their careful processing helps shape the character of this limited microlot.
The KATARA Series by Feralta Specialty Coffee was first introduced at Vegandale Festival at Citi Field in New York City in 2025 with a Castillo microlot. For the 2026 harvest, KATARA returns with a limited Papayo microlot, honey-processed in Sotará, Cauca, Colombia.
This release offers a clean, balanced cup with notes of berries, citrus, honey, chocolate, vanilla, and a subtle mint finish, with a smooth, syrupy body and a long, sweet citrus aftertaste.
Roasted and packed at origin in Cauca, Colombia.
Sweet cocoa base that carries the cup.
Ripe red fruit, juicy and clean.
Bright acidity with a fresh finish.
Best enjoyed as filtered coffee. KATARA shines in pour-over, drip coffee maker, or French press, with notes of berries, citrus, honey, chocolate, and a subtle mint finish.
20 g coffee / 10 oz water
No scale? Use about 3½ level tablespoons for 10 oz of water.
Prefer a lighter cup? Use 18 g coffee / 10 oz water.
If it tastes watery: use a slightly finer grind or increase coffee to 21–22 g for 10 oz water.

Feralta is rooted in Sotará, Cauca, where my family’s connection to the land goes back generations. That connection is why we have chosen to dedicate Feralta exclusively to coffees from Cauca.
By returning to the same region, harvest after harvest, we can gain a deeper understanding of its coffees, stay close to the people and places behind them, and share how each harvest evolves over time.
I hope every Feralta release gives you a deeper sense of Cauca—and a reason to return for the next harvest.
Limited release — we will email you the moment it is available.
